Ingredients:
For the Chocolate Base:
1/2 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 cup granulated sugar
1/4 cup melted butter
2 eggs
1/2 tsp vanilla extract
For the Dark Chocolate Mousse:
1 cup heavy cream
1/2 cup dark chocolate, melted
1/4 cup powdered sugar
For the Milk Chocolate Mousse:
1 cup heavy cream
1/2 cup milk chocolate, melted
1/4 cup powdered sugar
For the White Chocolate Mousse:
1 cup heavy cream
1/2 cup white chocolate, melted
1/4 cup powdered sugar
For the Topping:
Cocoa powder, for dusting
Fresh raspberries
Edible flowers, for decoration
Directions:
Preheat the oven to 350°F (175°C). Grease and line an 8-inch round cake pan.
For the chocolate base, whisk together the flour, cocoa powder, and sugar in a medium bowl. Add the melted butter, eggs, and vanilla extract, and mix until smooth. Pour the batter into the prepared cake pan and bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow to cool completely.
For the dark chocolate mousse, whip the heavy cream in a chilled bowl until soft peaks form. Gently fold in the melted dark chocolate and powdered sugar. Spread the dark chocolate mousse over the cooled cake base and refrigerate for 30 minutes to set.
For the milk chocolate mousse, repeat the process by whipping the heavy cream, then folding in the melted milk chocolate and powdered sugar. Spread this layer over the dark chocolate mousse layer and refrigerate for another 30 minutes.
For the white chocolate mousse, whip the heavy cream, then fold in the melted white chocolate and powdered sugar. Spread the white chocolate mousse over the milk chocolate mousse layer and refrigerate for at least 2 hours or until the mousse layers are set.
Once the mousse layers have set, dust the top of the cake with cocoa powder. Garnish with fresh raspberries and edible flowers for decoration.
